Resumen
El proyecto se centra en analizar de forma detallada y precisa el proceso de
despacho de producto terminado de la cervecería Bavaria S.A. ubicada en la ciudad
de Barranquilla, evaluando las principales variables que determinan los errores que
se están cometiendo al momento de los despachos de productos.
El objetivo de este trabajo es identificar y analizar los productos terminados de
mayor y menor rotación y a su vez la vida útil dentro de la cadena de abastecimiento
con el fin de diseñar estrategias por medio de métodos de rotación de productos
que lleven a optimizar el proceso de despacho dentro de la compañía. Este trabajo
busca contribuir eficazmente en la logística de la empresa, en el área del transporte
primario, el desarrollo de una herramienta que permitan optimizar el proceso de
cargue y descargue y el control de inventarios en tiempo real.
En la investigación, se analizó a detalle la información obtenida por medio de una
metodología de investigación descriptiva lo que ayudo a la recolección de datos por
medio de la operación, de igual manera también se puedo recopilar datos por medio
de revisión en campo y de entrevistas directas con el personal de primera línea, fue
necesario revisión de los últimos despachos de producto terminado así como de los
principales errores que se cometían al momento de los cargues y que incidieron en
quejas directas por parte de los centros de distribución a donde llegaba el producto
enviado. También se analizó los productos con mayor índice de obsolescencia,
teniendo como consecuencias bajas de frescura costosas, impactando el nivel de
servicio.
Dentro de los resultados obtenidos se evidencio una falta de seguimiento por parte
de los lideres del área y de la falta de control de inventario que se tenía al momento
de los cargues de producto terminado, quedando demostrado que era necesario la
implementación de un punto de control por medio de una herramienta, que apoyara
al personal en campo a registrar la información del recibo de producto y de obtener
un resultado cuando se estuviera realizando los despachos en tiempo real. Con el
objetivo de mejorar la calidad de los despachos cumpliendo la rotación FEFO de
producto terminado dentro de la cervecería Bavaria S.A., se diseñó y desarrollo una
herramienta por medio de Excel, que contribuyo significativamente la gestión de
control de inventarios.
La estructura de la herramienta fue pensando cubrir las necesidades de la
cervecería, dónde se incluyeron módulos específicos para el registro de información
y actualización de inventarios en tiempo real, facilitando la gestión y toma de
decisiones por parte de los lideres, así como de optimizar los tiempos de cargues
de los vehículos dentro de la operación.
En síntesis, este proyecto tiene como finalidad contribuir a la mejora continua de la
compañía y la calidad de los servicios de la empresa. La investigación también
busca aprovechar los requisitos de la cervecería en cuanto a calidad de despacho,
control de rotación y control de inventario, mejorando la eficiencia significativamente
el nivel de servicio y a su vez los tiempos de atención de los vehículos en la
cervecería
The project focuses on a detailed and precise analysis of the finished product dispatch process of the Bavaria S.A. brewery located in the city of Barranquilla, evaluating the main variables that determine the errors that are being made at the time of product dispatches. The objective of this work is to identify and analyze the finished products of higher and lower rotation and in turn the useful life within the supply chain in order to design strategies through product rotation methods that lead to optimize the dispatch process within the company. This work seeks to contribute effectively in the logistics of the company, in the area of primary transportation, the development of a tool to optimize the process of loading and unloading and inventory control in real time. In the investigation, the information obtained was analyzed in detail by means of a descriptive research methodology, which helped to collect data through the operation, in the same way it was also possible to collect data through field review and direct interviews with front line personnel, it was necessary to review the last dispatches of finished product as well as the main errors that were made at the time of loading and that had an impact on direct complaints from the distribution centers where the shipped product arrived. We also analyzed the products with the highest rate of obsolescence, resulting in costly decreases in freshness, impacting the level of service. The results obtained showed a lack of follow-up by the leaders of the area and the lack of inventory control at the time of loading finished product, demonstrating that it was necessary to implement a control point through a tool that would support the field staff to record information on the receipt of product and to obtain a result when dispatches were being made in real time. With the objective of improving the quality of the dispatches complying with the FEFO rotation of finished product within the brewery Bavaria S.A., a tool was designed and developed by means of Excel, which contributed significantly to the inventory control management. The structure of the tool was designed to meet the needs of the brewery, where specific modules were included to record information and update inventories in real time, facilitating management and decision making by the leaders, as well as optimizing the loading times of vehicles within the operation. In summary, this project aims to contribute to the continuous improvement of the company and the quality of the company's services. The research also seeks to take advantage of the brewery's requirements in terms of dispatch quality, rotation control and inventory control, significantly improving the efficiency of the service level and, in turn, the service times of the vehicles in the brewery
