Resumen
El proyecto tuvo como objetivo diseñar y estructurar documentalmente un laboratorio microbiológico en una empresa productora de harina de maíz, cumpliendo con la normativa legal aplicable a la industria alimentaria y con los lineamientos de la norma ISO/IEC 17025. Actualmente, la empresa cumple con los controles microbiológicos exigidos por la normativa legal; sin embargo, debido a la alta dependencia de laboratorios externos para la realización de estos análisis, se genera un elevado gasto presupuestal que limita la capacidad de respuesta rápida ante posibles desviaciones microbiológicas. Para abordar esta situación, se diseñó la estructura física del laboratorio, considerando criterios de seguridad, bioseguridad y distribución eficiente del espacio. Se elaboró un inventario detallado de equipos, insumos y reactivos necesarios para los análisis microbiológicos, incluyendo especificaciones técnicas y cotizaciones de distintos proveedores.
The objective of this project was to design and document the structure of a microbiological laboratory within a corn flour production company, in compliance with the legal regulations applicable to the food industry and the requirements of ISO/IEC 17025. Currently, the company complies with the legally mandated microbiological controls; however, due to a high reliance on external laboratories for testing, significant budgetary expenses are incurred, limiting the company's ability to respond promptly to potential microbiological deviations. To address this situation, the physical layout of the laboratory was designed, taking into account safety, biosafety, and efficient space distribution criteria. A detailed inventory of the necessary equipment, supplies, and reagents for microbiological analyses was developed, including technical specifications and quotations from various suppliers.
