Resumen
El análisis sensorial es una ciencia que se comienza a implementar en el siglo XX, esta disciplina científica es utilizada para evocar, medir, analizar e interpretar las reacciones a aquellas características de los alimentos y otras sustancias según la IFT (El Instituto De Tecnólogos De Alimentos De EE. UU.) que es uno de los órganos encargados de definir la evaluación sensorial como una disciplina de tipo científica que evalúa las reacciones provocadas a distintos alimentos por los cinco sentidos, olfato, gusto, tacto, vista y oído. Por consiguiente esto se realiza por medio de los sentido, donde se pueden observar propiedades como el olor, textura, sabor de un alimento con el objetivo principal que tiene esta ciencia y es hacer cumplir con los estándares de calidad establecidos por las empresas u organizaciones, por ende el análisis sensorial juega un papel fundamental en el aseguramiento de calidad de los productos, debido a que el mercado de alimentos y bebidas es de gran importancia para la industria y economía del país.
Cabe resaltar que para la aceptación de todo lo mencionado anteriormente intervienen diferentes organismos como lo es el Instituto Colombiano de Normas Técnicas y certificación (ICONTEC), un ente multinacional de carácter privado, sin ánimo de lucro, que trabaja para fomentar la normalización, la certificación, la metrología y la gestión de la calidad, además es el representante de la Organización Internacional para la Estandarización (ISO), en Colombia. En el campo de la normalización, la misión del Instituto es promover, desarrollar y guiar la aplicación de Normas Técnicas Colombianas (NTC) y otros documentos normativos, con el fin de alcanzar una economía óptima de conjunto, el mejoramiento de la
calidad y también facilitar las relaciones cliente-proveedor, en el ámbito empresarial nacional o internacional.
El presente estudio es de tipo teórico cuyo objetivo principal es el diseño de técnicas metodológicas de pruebas sensoriales que puedan ser aplicables a las diferentes organizaciones del sector de consumo masivo.
Se pueden observar cómo resultados los formatos, instructivos, procedimientos que son aplicables para las diferentes pruebas que se utilizan en los análisis sensoriales.

It should be noted that for the acceptance of everything mentioned above, different organizations are involved, such as the Colombian Institute of Technical Standards and Certification (ICONTEC), a private, non-profit multinational entity that works to promote standardization, certification, metrology, and quality management, is also a representative of the International Organization for Standardization (ISO), in Colombia. In the field of standardization, the mission of the Institute is to promote, develop and guide the application of Colombian Technical Standards (NTC) and other regulatory documents, in order to achieve an optimal economy as a whole, improve quality and also facilitate customer service. relationships with suppliers, in the national or international business field.
