dc.description.abstractLas bayas son frutas altamente apreciadas por sus características organolépticas y beneficios a la salud. Sin embargo, diferentes brotes causados por patógenos transmitidos por los alimentos se han asociado al consumo de estos productos. El presente trabajo tuvo como objetivo analizar diferentes brotes vinculados a la ingesta de bayas ocurridos entre 2009-2023, extrayendo información relevante como principales agentes causales, las bayas implicadas, estado de las bayas, vehículos involucrados y factores de contaminación. La presente revisión encontró que los virus entéricos fueron los principales agentes etiológicos, resaltándose la participación del virus de Hepatitis A seguido del Norovirus. Aunque en menor proporción la contaminación de las bayas fue ocasionada por bacterias; se destaca dentro de este grupo a Salmonella entérica. La frambuesa en estado congelado fue la forma mayoritariamente asociada a los brotes; asimismo, batidos y cocteles de frutas a base de bayas fueron vehículos relevantes en la generación de enfermedad. Mayores estrategias de prevención y control deben ser aplicados a lo largo de la cadena alimentaria para disminuir la incidencia de casos de enfermedad ocasionados por estas frutas.spa
dc.description.abstractBerries are highly appreciated fruits for their organoleptic characteristics and health benefits. However, different outbreaks caused by foodborne pathogens have been associated with the consumption of these products. The objective of this work was to analyse different outbreaks linked to the ingestion of berries that occurred between 2009-2023, extracting relevant information such as main causative agents, berries involved, state of the berries, vehicles involved and contamination factors. The present review found that enteric viruses were the main etiological agents, highlighting the participation of the Hepatitis A virus followed by Norovirus. Although to a lesser extent the contamination of the berries was caused by bacteria, Salmonella enterica was prominent in this group. The frozen raspberry was the berry mostly associated with the outbreaks; likewise, berry-based fruit shakes and cocktails were relevant vehicles in the generation of disease. Greater prevention and control strategies should be applied throughout the food chain to reduce the incidence of disease cases caused by these fruits.eng
