dc.description.abstract | El presente estudio evaluó de manera preliminar la calidad microbiológica de ambientes y alimentos preparados de dos cafeterías de una institución educativa en la ciudad de Barranquilla (Atlántico). Se realizó una caracterización de los productos más vendidos en cada cafetería, seguido de un muestreo de alimentos sólidos, bebidas, así como del aire de cada cafetería, con el fin de detectar microorganismos indicadores (aerobios mesófilos, mohos y levaduras, Escherichia coli) y patógenos de interés sanitario (Salmonella spp. y Staphylococcus aureus). Un total de once muestras de productos fueron analizadas. El 63.6% de las muestras presentó recuentos de coliformes. Para el caso de las comidas preparadas el 85.7 % de las muestras presentaron colonias presuntivas compatibles con S. aureus sin confirmación mediante prueba de coagulasa. En cuanto a las bebidas, 75% de las muestras sobrepasaron el límite establecido por la resolución 1407 de 2022 para mohos y levaduras. dc.description.abstract | This study preliminarily evaluated the microbiological quality of environments and prepared foods in two cafeterias of an educational institution in the city of Barranquilla. The most sold products in each cafeteria were characterized, followed by sampling of solid foods, beverages, and air from each cafeteria to detect indicator microorganisms (mesophilic aerobes, molds and yeasts, Escherichia coli) and pathogens of public health concern (Salmonella spp. and Staphylococcus aureus). A total of eleven product samples were analyzed. 63.6% of the samples showed coliform counts. In the case of prepared foods, 85.7% of the samples had characteristic colonies of S. aureus. Regarding beverages, 75% of the samples exceeded the limit established by Resolution 1407 of 2022 for molds and yeasts.
